Recipe: Mashed Potatoes

There’s an easy trick to adding some flair to mashed potatoes. Just add roasted garlic! I remembered this trick from a dinner party at Jill and Peter’s house (I think it was this W-S recipe, and this one is really good too).

Last week, when we roasted a chicken for dinner, I threw in a bulb of garlic with the bird. Chop off the top third, add a little olive oil and roast in a small dish for about an hour along with whatever you’re making for dinner. When you’re ready to mash the potatoes, pull the roasted cloves out of the garlic with a fondue fork and smash to a pulp. Add the roasted garlic with your milk, butter, salt and pepper. A bit of shredded Parmesan cheese mixed in is also nice. Yum!

    Sounds delicious! I always wanted to have dinner at that SF restaurant called The Stinking Rose? They have a dish called 40 clove chicken. I love garlic even though it doesn’t love be back.. it comes out of my skin for the whole next day, but since I work alone in my studio.. it’s sometimes worth it!

    I love roasted garlic and eat it pretty much any time I have a chance. It’s great just on crackers (or by itself).
