Things I Love Today: Fresh Mint
Having fresh mint growing in the yard is a great joy at the new apartment. For iced tea with lemon and sugar, strong mojitos and, if I ever learn how, Vietnamese spring rolls.

Oh, spring rolls are so easy, especially since we know you roll out awesome (& complicated-looking) dinner parties!
Thinly slice your protein & veggies and wet rice paper 1 at a time (found everywhere nowadays) then roll up; mix some sauce (the "hardest" part but many just use soy sauce) & dip away. Voila!
Our family does: sliced boiled pork, shrimp, bean sprouts, cucumbers, graden greens & mint 🙂 & cilantro. Sometimes even venison or beef…however tempting, don't fill too much!
I have a bunch of mint growing wild in my yard too! Apparently, I have 4 different kinds of mint (didn't even know that there was such a thing as chocolate mint! ha!) Let me know if you want more! 🙂
