Recipes: What to do with sour cream
Something is wrong with me this week. Either I am way to busy or I am losing my mind. Twice in the last four days, I have tried to buy cottage cheese (so good with pepper!) and ended up with something completely different. The first mistake was a little more understandable. I didn’t realize that Safeway organic cottage cheese was a horrible, disgusting, not-even close approximation to the non-organic versions.
The second mistake was caused by the packaging of sour cream and cottage cheese being identical. I bought a huge container of what I thought was cottage cheese last night and didn’t realize it was sour cream until I dug in my fork. Darn it! What am I going to do with all this sour cream? Here are some ideas:
- Black bean and turkey tacos – It’s on the menu for tonight’s post-kickball dinner. This is approximately where I run out of ideas for using sour cream and start looking online
- Sour cream and lemon poundcake – That sounds pretty tasty. Maybe with some fresh strawberries.
- Roasted squash, red pepper and jack cheese quesadillas with chipotle lime sour cream – Overkill? You bet! But it is Cinco de May after all.
- Blini with sour cream and caviar – Heaven forbid that I throw out the sour cream. I’ll just have to buy some caviar instead.
