Recipe: Baked Salmon

Natalie over at 100 Percent Cottam is soliciting healthy recipes this week. Here’s one of my favorites and what Rob and I had for dinner last night:

Baked Salmon
Purchase salmon fillets (with scales on the back, like this) at the store. Pour a small amount of olive oil in the bottom of a pan just big enough to hold the fillets. I like to use a porcelain baking dish. Add white wine until it reaches about halfway up the fillets. Sprinkle the top of the fish with dried herbs of your choice. I usually go for dill, pepper and cajun seasoning. Bake at 350 degrees for about 30 minutes, or until the fish is cooked thoroughly.

I paired this with asparagus last night, but it’s equally good with sweet potato fries or steamed squash. This recipe is so fast and easy. The best part is that it doesn’t make your house smell like fish at all.

    Just mentioned to my fiance that I was going to try your Salmon recipe and he is fired up for it. We are big asparagus fans as well so Friday night should be fun. Thanks for sharing!!
