Today’s photo is also from the kitchen. (All that rain must be limiting my photo options!) This was part of the process of baking a couple batches of my mom’s famous orange cranberry bread. Here’s the recipe:
Orange Cranberry Bread
1 orange
A few tablespoons of frozen orange juice concentrate
2 tablespoons of butter
1 egg
3/4 cups of sugar
1 cup fresh cranberries, chopped
1/2 cup chopped walnuts (optional)
2 cups of flour
1/2 teaspoon salt
1/2 teaspoon baking powder
Grate the rind of one orange and squeeze its juice into a bowl. Add the frozen concentrate to make 3/4 of a cup. Microwave this to a boil and add the rind. Stir in the butter until melted.
In another bowl, mix together the egg and sugar. Once blended, combine with orange mixture and add the cranberries and walnuts.
In yet another bowl, combine the flour, salt and baking powder. Stir this into the first mixture and pour into a buttered 9×5 loaf pan. Bake for an hour at 325 degrees.
