Things I Love Today: Jacket Potatoes

A baked potato (the brits call them “jacket potatoes” which is way more fun) and a big green salad has to be one of my all-time favorite simple dinners. Easy and cheap! We had them last night, loaded with pepper and cheese, after our NERT meeting.

I love the total ease of tossing a potato into the oven and having something delicious come out. And when I’m even too lazy and impatient for that I can nuke one, although the quality certainly suffers. that’s what I get for being lazy, ha.

Oh, the delicious simplicity of a baked potato. I haven't made them in way too long. This was one of my favorite single girl meals – except I made the potato an all-in-one meal by topping it with cheese & steamed broccoli. Will add to the list of "what to cook when energy is low."
