Recipe: Mushroom Pasta
This is my favorite thing to cook for dinner when it’s just me. It’s pretty great as a healthier replacement for mac-n-cheese. The lemon is key.
Mushroom Pasta
Serves 1
1 cup of rotini pasta
1 cup of sliced crimini mushrooms
1/4 cup of slivered almonds
1 small pat of salted butter
1 clove of garlic, minced
Squeeze of lemon (about 2 teaspoons)
Dash of truffle oil (optional)
Salt & pepper
Drizzle of olive oil
Start the pasta in a pan of boiling water. Melt the butter with olive oil, top with mushrooms, garlic, lemon and truffle oil. Cook until the mushrooms just barely softened. Turn off the heat. Season with salt and pepper. Top with the almonds. Drain the pasta and add to the mushrooms. Mix over high heat and add your final seasonings. You might need a bit more lemon and pepper.
